Squash Basque Cheesecake
Flourless, (yes, gluten free!) cheesecake with roasted squash. This is a traditional style of cheesecake from the Basque region known as ‘burnt’ cheesecake. Barely set in the center, for a rich and creamy texture, but baked hot and dark- thus the burnt. As we like to do, there’s a secret sweetening inside, which takes this cheesecake to another level that you won’t find just anywhere else… house made caramel lends a complexity to that begs for one more bite.
